Here is one secret ingredient that many don’t tell you about. This coconut amino sauce is a healthy alternative to soy glaze. It contains no gluten, making it a great option for those with allergies. Coconut aminos are gotten from sea salt which has a lesser amount of sodium than soy glaze. the downside of this alternative is that coconut aminos are more expensive and have a sweeter flavor.
Maggi seasoning sauce
This seasoning has been in existence for over a century which is used to enhance food dishes in Europe. The region where this is produced should be noted as its flavor and recipe are customized to the local cuisine. You will have to check the label of the ingredients. Maggi contains both wheat and soy but in little amounts than soy glaze. But you can try it if you are in search of a different flavor enhancer.
Recipe For Soy Glaze
You can prepare soy glaze at home. To do this you need twelve ounces of preferably organic flour, eight ounces of salt, four quarts of water.
How To Prepare
Step 1: First cook soybeans before chopping them with a knife. You can use a food processor to make the work easier. Add this paste to a mixing bowl.
Step 2: Add flour into the bowl and mix with the other two ingredients. Stir until you get a fine smooth mixture and pour it out on a flat surface let it form a log shape.
Step 3: Cut this log into thick slices, about a quarter inch. Moisten your paper towels and place them on the flat top. Start layering them and add dough disks in between the towels. Make sure to finish the layering with a paper towel. Wrap in plastic wrap, then place it on a baking sheet.
Step 4: place this package into an inconspicuous space and allow it to remain there until it is fully saturated. This usually takes up to seven to ten days. After this period unwrap your packages and place them on baking sheets that are clean and set the, at one to two inches apart. Dry them completely until they take on a brown color. If possible set them under the sunlight directly.
Step 5: Mix water and salt in a pot and place it in all disks. Cover the pot with a plastic wrap and allow the mixture to ferment. Stir this mixture daily with a wooden spoon. You will know the fermentation process is complete when all disks are dissolved completely, this process will take weeks to months.
Step 6: Strain out the liquid and put it inside a container. Congratulations, you now have your own homemade soy glaze.
